I hope your weekend is going well. Mine is just flying by! I got a few requests for the details behind the apple oats I've been completely obsessed with. So, ask and you shall receive!
Apple Syrup n' Spice Oatmeal
Note: For these oats, I use extra water because it turns into a delicious syrup at the end when you add and simmer the spices.
Ingredients:
1 apple (honeycrisp are delicious, so are jonagolds.)
1/3 cup of oats (or 1/2 if you want!)
1.5 cups of water for 1/3 cup of oats. Maybe 1 2/3 cups for .5 cup oats?
Lots of cinnamon
Pumpkin pie spice (or nutmeg and cloves)
~1.5 tsp Unsweetened cocoa powder
Stevia or other sweetener to taste
Spoon of nut butter
Optional: Several spoonfuls of unsweetened applesauce (Whole Foods brand is my favorite.)
Directions:
1. Chop up an apple into pretty small pieces
2. Add the apple, oats, and water to a pot
3. Bring the oats to a boil, then turn the heat down and simmer for 4 minutes
4. After 4 minutes, add a very generous amount of cinnamon to the oats. Stir, then add pumpkin pie spice (or nutmeg and cloves), and about 1 tsp of cocoa powder. Stir, and let it simmer for 1 more minute.
5. After 5 total minutes of simmering, turn the heat off. Add stevia (or your sweetener of choice) to taste. You can also add a couple spoonfuls of applesauce if you'd like.
6. Add a spoonful of peanut butter and chow down! But careful, cause it's usually WAY hot unless the applesauce you added was refrigerated. Sometimes I pop the bowl in the back of the freezer for about 2-3 minutes while I get my coffee ready. That way, most of the oats have cooled down slightly just so you don't burn your mouth when you're too impatient to wait for em to cool ;)
I hope these directions are clear! If you have any questions or try it out, let me know :) You can also make it with less water (maybe just under 1 1/3 cup for 1/3 cup of oats, and it'll look something like this:
But I really love how more water it gets a syrupy "sauce." So good!
Well, I better get back to the bazillion muscle notecards I have to make. We got a whole whopping 2 extra credit points, out of around 350 total points. But ya know what, any extra credit is extra credit. And the notecards will be a good study tool for our practical on Wednesday. We have to know a bazillion muscles, plus their origin, insertion, and action.
It's so much fun, I can't even stand it. I've already spent hours doing this and I can tell that I'm gonna have about 2-3 more hours writing out all the info on the rest of the cards. And then I actually have to learn it?? Haha, at least I already mostly know where all the muscles are and their names. It's just gonna be the origin, insertion and action to study.

As you can tell, I'm loving the apples right now. Pumpkin is way up there too, but I'm also liking that apples don't turn my hands orange. Or red ;)

I love pumpkin oats, but one of my other favorites is a banana and cocoa powder cooked in topped with nut butter.
Also love pumpkin with cranberry sauce and white chocolate chips.
Love the muscle names. I do medical transcription and have an expander so I don't have to remember ones like sternocleidomastoid - I just use 3 keystrokes and it's in there.

hahah you totally cracked me up with the note cards. i am 150% with you! I have so much fun making flash cards but it takes FOREVER. Once you're done, it's like, Oh crap, I still have to memorize them! dang! hahaha :) Good luck Anne!!

Oh girl! I had to memorize those muscles, origin, insertion, etc! It was no fun; but it CAN be done! trust me! I couldn't tell you it all anymore, but just Ace the test and you're golden! haha Unless you are going to medical school...then it might be best for it to stick! lol

Just stumbled upon your blog! Always glad to find other people who live in Arizona! Bananas are ALWAYS a staple in my oatmeal. I'll toss in other things as well, but without a banana it just isn't the same!
oh yum!! I'm totally going to have to make this :) Hmmm favorite oats add in... I'm a sucker for making oats with water and then once it is cooked I dump in a container of fruit flavored yogurt. It's so creamy and good!
What brand of stevia do you use? I use Sweetleaf.
