Chocolate Coconut Drops

Hey guys,

Been a while, I know. I crashed a little bit after classes were done and I'm trying to recover for finals. I finally feel pretty good today, just in time to start studying for my tests. ha!

I made this really yummy chocolates I wanted to share with you:

Chocolate Coconut Drops

Ingredients:
Unsweetened cocoa powder
Cinnamon
Stevia
Water (or any kind of milk)
Coconut for topping

It was super simple to make em. I just took cocoa powder, cinnamon, and stevia and mixed it with water to taste. I aimed for a consistency of chocolate pudding. Then I spooned little circles onto a sheet of parchment paper and topped em with coconut. Then I stuck it in the freezer.

After a couple hours (or a night, if you don't have an overzealous freezer like mine), they'll be frozen and you can pick em up with your fingers! I wouldn't let them thaw, since I assume they'd just go back to chocolate pudding, but it's a great treat to have! I'm sure you could use milk instead of water, too. And if not stevia, your sweetener of choice :)

Q: If you celebrate Christmas, do you have a real tree or an artificial tree?

We always have an artificial tree. One time we got a real tree when I was little, and my sister and I were playing around it. I ended up scratching my eye with a branch and had to go to the doctor and wear an eyepatch for a while. After that, no more real trees ;) What about you?

We have a small fake tree in our apt because we both travel so much for work. I should probably put that baby out soon, huh?

I like the way your dessert mind works... I make stuff like that all the time for my hubs to get him off ice cream (dairy) and keep it that way. He's been off for 18 mos but if I dont keep the treats coming, we'd be back down the dairy highway!

Fake tree as a kid. As an adult, dont put one up b/c we're gone most of Dec. Real trees seem very non-eco friendly but hey, maybe I am missing something about the way they grow them.

Anyway hon, hope life is treating you right!

those are so cute and look delish! my mom has a fake tree now, but when i was a kid we used to go chop a real one down! i dont have one at my house now :(

Wow those coconut drops look amazing, I've never had anything like that.

That's a horrible story about your real tree! I always have a real tree, it's definitely not cost or time effective but you can't beat the amazing Christmas tree smell.

PS. I totally agree with what you wrote on my blog about missing random times during the day. I definitely miss that, it's so much harder to run errands, go to the gym, schedule appointments when everyone else is!

Those look so good! We have an artificial tree as my husband is allergic to real ones. I had no idea for the first few years we were together. He never told me because I loved real trees so much, and just snuffled a lot. I felt so bad! So, that next year we got the fake one.

Omigosh... these look fab! They're on my list of things to eat... I mean make... over Winter Break :)

My family celebrates but we don't do a tree every year (my dad's anti-tree) and when we do it's artificial... but one day when I have my own home it'll be real!

We had a real tree when I was a kiddo but when I grew up, it was artifical tree time. Good luck with your finals!

oo those look like a perfect snack for sure :) We always had real (HUGE) trees growing up.. but now I have artificial (they look better then the ones they had growing up... and this way no killing poor innocent trees LOL)

This look great and so simple. I was kind of against the idea of baking my annual goodies.. because to be honest I just feel lazy and worn out... but these are great idea.

Yummy chocolates! Just make sure you drink a lot of water after eating those sweets. I think I can eat one-two coconut drops, am still a healthy conscious person. Its really tempting!
