Roast Me Some Veggies!

Hey everyone!

Hope you had a great Thursday. Last night I ended up staying up til the eye, ear, + brain lab practical results were posted around 10:30 pm. I got an 85%, which is pretty good for those things! It's 50 questions, all fill in the blank with no word bank, so you really have to know your stuff. I'm pretty sure I don't want to be an Eye, Ear (and nose + throat) doctor, and I'm content with my sister being the brain expert of the family ;) She's going into neuroscience--isn't that cool? The funny thing is, she probably would have aced that brain portion of the lab if I teleported her there. Ha! Anyway, enough about brains. How about breakfast? ;)

Buuuuut first the backstory: While waiting for the practical results to be posted, I caught up on blogs. So many of you guys had pumpkin oats, and I started craving them like crazy! You know how ice cream addicts don't keep ice cream in the house? Well, being a pumpkin addict, I don't keep pumpkin in the house either. I buy it when I need it and don't stock up--or else I'll eat it all! So I had no pumpkin, but I did have canned butternut squash. It's not a weakness like pumpkin, but it's pretty darn good! So I went to bed planning squash oats :) And after 9.5 hours of sleep (finally!), here they are:



1/3 cup oats
1 cup canned pureed butternut squash
Cinnamon
Vanilla extract
Stevia
Cacao powder
Spoon of dark chocolate pb

These were so good! They definitely had that creamy and smooth texture I was looking for. Though I like my apple oats syrupy, I like squash oats thicker. You can see that matte consistency!

I went to my History of Science class, where I thankfully didn't start dozing off this time ;) Our final is apparently on tuesday during class, instead of the regular finals week. Sooo, there goes my weekend. Ugh!

After classes, I got to come home and thank my lucky stars harp studio was canceled this week. I chilled and messed around with the lil digital handheld tv I got at Kohls during black friday. It actually gets a lot of channels here, and in really good quality! I previously didn't even have a tv in my apartment, so it was pretty cool :) I also had a moringstar grilled chick'n salad:



I was out of regular mushrooms so I broke up a portobello cap mushroom to use instead. It worked well!

I took a much needed trip to the grocery store and picked up a ton of produce. I roasted some green beans and brussels sprouts in my lil toaster oven to use for dinner:



Seasoned with salt + pepper, dried basil, oregano, onion, garlic, and also jamaican jerk spice mix. Roasted for 20 minutes at 415 degrees :)

With spray butter of course ;) Yea, I pretty much ate 3/4 of that pan already. Haha!

I'm currently drinking this 1.25 liter bottle of sparkling orange water:



It was on sale for 99 cents at the store. I really like sparkling water but I usually drink La Croix. Oh, and I'm totally drinking it straight out of the hugh jass bottle. Hey, I live alone so there's no one to get pissed at me ;) Haha, no shame!

Q: How often do you go to the grocery store?

I go about twice a week or so. Sometimes 3x/week. I eat a lot of produce, so I like to go often to make sure it's fresh. I also rarely eat out, so almost all my meals and snacks are coming from home. What about you?

Hooray for roasted veggies! Aren't they just the freaking best! Nice job on the grade!! I think that is just awesome. I didn't get my mock crisp in tonight- tomorrow for sure. I go to the grocery store 1x for a big trip and then in the middle of the week 1x to re-fresh my produce.

Ohhh...I try to go shopping only once a week, but as of right now I just kinda go whenever i need to to get food...and i love grocery shopping, so it's fun. :)

i did NOT know butternut squash came CANNED!! thats so cool you are helping clean up a park :) you go girl! those oats look AMAZINGGG. love the orange water too

MMMMM i am a roasted veggie goddess, i love them so much! If i made a tray of them for myself, i'm pretty sure i could eat the entire thing just myself.!

I go to the store probably twice a week, sometimes three depending on what I forget or what new recipe I find and want to try :D I wish I could do it all in one trip though!

I go to the store once a month. I like to shop in bulk. It also helps me plan out my meals for the week much better this way. There are times when I forget something and have to make another run, but for the most part it works out for me.

how often?! girrrlll I am there minimum twice a week! I usually go 3 times and then maybe anotehr (but one of those times may just be to WF for a salad bar!) but still I luuurrrveee grocery stores!

my best friend is ADDICTTED to spray butter its insane! she will spray it right into her mouth for minutes at a time, I guess I never acquired a taste for it

YAY for the awesome grade!! Congrats, girl! Wonder how many people are going to drop now?! ;)

Bnut sounds like a worthy addition! Given the pumpkin shortage, it may be the next bloggie addiction! I need to stop being so dang lazy and actually roast some veggies. Everyone posting their roasted veggies has struck a craving!

I go about 3x a week for the same reasons as you. I eat a lot of produce and if I'm not out in 3 days, it's usually icky.

I love roasted veggies!

I have about 20 cans of pumpkin in the house. I used to not keep it around but I am worried I won't be able to feed my addiction later. Luckily knowing it is limited means I am rationing it! Well trying :o)

I go to the grocer one to four times a week depending on if I am traveling and for how long.

I love heated apples in my morning oatmeal, but I am super excited to try your mock apple crisp for dessert one night!
I usually make 1 big grocery trip every 2 weeks, but I stop another 1-2 times per week for fresh veggies or produce, eggs or milk - basically if any of my basics runs out before the big trip.

Lots of beautiful veggies! I love how you can't keep pumpkin in the house- most people say cookies or chips!

I try to only go once a week, but we always run out of something. I was there at 10 last night getting emergency veggies!

I go to the groc store all the time....I need it to be fresh, too. Albertson's 2-3x/week. TJ's 1x/week. And WF as little as possible. But if I didnt plan, I'd be in a store every single day...ha!

oh! those oats are totally so thick :) i love it!
my hands have the pumpkin glow right now and we've been stocking up like cuuuhrazy because of the pumpkin shortage hahaha i even have my mom picking up cans when she sees them!

Look at you ms. smarty pants!!! I think it must be the oats!!! I love that the butternut squash puree actually made your oats...brown???? Isn't it supposed to get orange?? hahahaah that's hilarious really!! But yes, delicious looking. Good to know it's not one of those "weak in the knees" add ins or i'd be stocking up in addition to my pumpkin! hahaha

Roasted brussel sprouts are my favorite!!!! Yours look fantastic. I could definitely eat that tray in one sitting!!
